Durian baked cheesecake


 
This is seriously not for the light hearted. 
Durian the 'King of Fruits' is strong and pungent.
The aroma is distinctive.
Just like marmite, you either love it or hate it.




I baked this cheesecake with durian flesh and my oh my! 
The most exciting cheesecake I have ate.

Ingredients:
Biscuit base-
150g digestive biscuits
70g butter

Crush the biscuits and mix in melted butter, firmly press it into the cake tin and chill in fridge for 30 minutes.

Filling-
500g cream cheese
80 - 100g caster sugar (depending how sweet your durian is, I used 100g)
80ml soured cream
2 eggs
1. Tbsp corn starch
180g durian flesh (mashed)

I have used frozen Durian as we don't always have fresh Durians available.
This is still very nice and tasty considering its frozen.

 

 Method:
Whisk cream cheese and sugar until combined.
Add one egg at a time and mix well.
Add soured cream, corn starch & durian flesh and whisk making sure the corn starch have no lumps in the mixture.
Reserve 1. Tbsp of cream cheese mixture & set aside.


 


Now fill your cream cheese mixture into the prepared baking tin with your biscuit base.
 I've used a 7 inch baking tin without loose bottom.
If you use a spring form tin make sure you double wrap it with tin foil.

 
 
Reserve 1. Tbsp of cream cheese mixture and add this with 1. Tsp of cocoa powder dissolve with 2. Tsp of hot water. Mix together to form your cocoa paste for piping the pattern.

 
I've made a small piping bag with baking paper.
Fill it up and make a small snip on the tip.

 

This is how I made the pattern on my cheesecake.

 
 
 
Once you have made your pattern, bake your cheesecake in a water bath for 1 hour in a preheated oven at 180c.
 
 
Make sure you have wrapped it with few layers of foil and baking paper.
Fill tray with hot water.
Once its done switch off your oven & leave it in there for an hour to cool down. 
Then chill in the fridge over night. 
 

This is what it looks like once you have removed the spring form tin.
 
 
 
 
I covered the sides with crushed Oreo biscuits. You don't have to do this as it would still look good without it but I just want to make it little special. 
 
 

This cheesecake gave me 8 generous slices. 

 

I waited 24 hours for this moment.....

 
 
One slice is not enough! 
The texture is smooth and creamy. I really amazed myself how good it tastes.

 
My hubby gave me thumbs up! The plate says it all.
