Oreo Bundt cake

 
 
If you are looking for something a little different then you should try this.
Buttery, thick and sweet. 
Bundt cake have got the name from the bundt tin it is baked in.
The hole in the centre helps the cake cook evenly.
 
I have made this for the kids, they prefer a denser cake and anything with their favourite biscuits in it.
I don't make this very often as it is quite a large cake.
But if you have a party or a large family then try this recipe out.
 
 
Ingredients:
 
200g butter, room temperature
250g caster sugar 
(use less if you are topping the cake with icing sugar)
4 eggs
2. tsp vanilla extract
200g sour cream
350g plain flour
2.tsp baking powder
1/2. tsp bicarbonate of soda
1/4. tsp salt
6 large Oreo biscuits (break up in pieces)
 
Topping:
Icing sugar
6 large Oreo biscuits (break up in pieces)
 
Method:
 
 
In a large bowl, cream the butter and sugar together until light and fluffy.
Add in the eggs one at a time, combine well after each addition.
Add in the vanilla extract.
Sift the flour, baking powder, bicarbonate of soda and salt together.

Fold in flour and sour cream alternating them in 3 separate batches. 

Careful not to overfold, mix until just combined.
 
 
Generously grease a 9 inch bundt tin with melted butter. 
Spread half of the cake batter into the bundt tin, add the broken pieces of Oreo biscuits on the top keeping at least 1cm away from the sides. 
You don't want the biscuits to show on the sides of the cake.
Add the remaining half of the cake batter on top. 
 Smooth out the top and bake in a preheated oven at 180c for 50 minutes.
Test with a wooden skewer as different oven bakes at different times.

 
 
Leave to cool in the tin for 15 minutes before unmould it.
Turn cake over for further cooling.
Your cake should be soft and moist.
Prepare some icing sugar and fill in a piping bag, you want the icing to be really thick.
 Pipe icing sugar over the top of the cake.
 

 
 
 
Sprinkle broken pieces of Oreo biscuits on top of the cake, the icing will make the biscuits stick.
Dust with icing sugar.

Slice and serve the cake, you can get 12 servings from this cake and these are very generous servings

 
 
My verdict: Sweet, crumbly and buttery. Perfect with a cup of tea.

  1. Hi Mandy made your oreo bundt cake for a friend's dinner party. Kids and adults love it very much though I did not get the same icing sugar look as yours. Can you share how you made the icing sugar. Thanks for sharing.

    1. I just add less water to the icing sugar so it is really thick. You have to keep testing it until you get the right consistency. I haven't measured out how much icing sugar to water I used.

  4. Hello. Can This recipe be used to carve the cake to cover with fondant? Or is it too soft?
