Coconut Agar Agar with Raspberry

 
 
What is Agar Agar?

Agar Agar is a strong natural jelling agent made from seaweed also as known as kanten.
It doesn't give the same texture as gelatine, it is actually firmer.
As it is a vegetarian gelatin substitute this makes it suitable for vegetarian and vegan diets.
It has no calories, no carbohydrates, no sugar and no fat! Conatins 80-percent fiber.
Great stuff which we should eat more of.
Or shall I say I should eat more of it as it helps weight loss!
It swells in the stomach as it absorbs water, making you feel full.
I shall be using this amazing stuff more now that I discovered the health benefits.

You can find the powdered form in health shops or in chinese supermarkets.
They also sell these in large strips like foam.
 You can find prepacked ones in different flavours and colours. 
 


 For this recipe, I have used a 9x9 inch square baking tin.


These are the agar agar mix I have used. 
Make up 2 packets of the coconut agar dessert mix.
This requires 240ml water each, I used 500ml for the 2 packets.



Boil until the powder is completely dissolved.

Pour straight into the square baking tin.
Wait for it to cool and set, agar agar mix would set in room temperature.
Prepare 500ml of clear agar agar jelly mix.
Pour straight onto the coconut agar agar jelly that's already been set.

 

Line a row of fresh raspberries.
 
 
Wait for it to set.
 
 
Once set, you can chill in the fridge first or cut up into shapes immediately.
 
 
I have used heart shaped cookie cutters and cut some into squares and rectangles.
 

It is so easy to prepare and can be eaten immediately.
 You can cut into any shape or add any fruits you like.
A simple and  healthy dessert.
Try and make some too.

  1. What is the time gap between the 1st and the second layer.when should i pour the second layer?.tried this wonderful recipe , but when cut and served the layers got seperatedand looked like two different sets.taste as awesome

    1. It takes no time to set. Agar Agar is great as it requires no chilling for it to set like jelly. But you do need to chill once you have done two layers. It does separate if you serve too soon.

  2. Hi Mandy!...love ure work and ideas...this looks like an easy one..quick question though...am from India and we don't get the premix coconut agar agar...any ideas? - namrata

    1. Hi Namrata, you can use coconut milk and cook agar agar powder and add sugar. You will have to follow the instructions on the agar agar powder which should tell you how much liquid you need to set it.

  3. Hi Mandy,how can I replace agar agar instead of gelatin in the mango cheesecake recipe? Should I use the same quantity? I bought some agar agar flakes n would like to use it coz it's vegetarian.
