Nutella cupcakes

Mmmmm Chocolates! My weakness and I can't get enough of it!
How about a soft chocolate sponge with thick creamy Nutella buttercream?
This is one you have to try if you have a sweet tooth and a big fan of chocolate.
My daughter have helped me with this and it's the kind of baking you can get your children involve too!

Chocolate cupcakes
100g Self raising flour
15g cocoa powder
(sift flour and cocoa powder together)
115g butter (room temperature)
100g caster sugar
2 eggs
1/2 tsp vanilla extract
1 tbsp milk
Whisk butter and sugar until light, pale and fluffy.

Add one egg at a time.

Fold in the flour and cocoa powder in 3 batches and add in the vanilla extract and milk until smooth.

Scoop batter into cupcake cases half filled.
Bake in a preheated oven at 180c for 18- 20 minutes.

Cool on a wire rack and make the Nutella butter cream.

Nutella butter cream
100g butter (room temp)
200g icing sugar
1/2 tsp vanilla extract
1 tbsp milk
100g Nutella
Whisk butter until light and fluffy.
Add sieved icing sugar gradually and whisk until combined.
Whisk vanilla and milk until smooth.

Look at the mess!! Icing sugar everywhere!!
Add soft Nutella to butter cream and whisk.

Whisk until combined.

So fluffy you can eat it off the whisk!

I piped the butter cream using a 1M wilton nozzle.
Swirl some nutella over the butter cream and sprinkled chopped hazlenuts over it.

Seriously for a sweet tooth! I find it too rich but my kids loved it!
