Late post: Easter Cakes 2014

Very late post I'm updating but I have to fit this is as it's one of my favourite cakes of all time.
 
 Didn't think I would be able to make Easter cakes this year, children poorly and busy all week coming up to the  Easter holidays.
 
I manage to make these the very last minute as my poorly child was actually didn't need much looking after.  She was off sick with a viral infection, she missed the two last most fun days off school.

Double chocolate cheesecake

 
Rich, smooth and very chocolatey.  Made this for my friend who was visiting me.
I love the colours of the dark and light with a base of Oreo biscuits.
I kept the design simple as it looks sharp with the two layers.
This would still work well in a 7 inch cake tin, you would get a higher cheesecake.

Chocolate cheesecake

 
 

Friday morning, kids are both at school, I have the morning free but it was absolutely chucking it down today.  I wasn't in the mood for shopping so what can I do?
Shall I make a cheesecake? Oh why not haha..
 
I thought I could bake a simple chocolate cheesecake but I ended up piping chocolate to decorate the cheesecake. As usual, I like to make my cakes to look pretty.
 
And here I made this chocolate cheesecake with piped chocolate deco and strawberries.
And what is so great about this? It doesn't have to be baked in a water bath. And yes, it cracked but we are going to cover it with ganache.
