Lemon cream cheese cupcakes

 
These yummy cupcakes are full of flavour. With cream cheese added to the ingredients it's taste like a cross between a butter cake & Japanese baked cheese cake. 
Flavour is amazing as the zesty lemon is refreshing. 
(Recipe adapted from Tempt: cupcakes to excite by Betty Saw with slight adjustment) 

Ingredients:
135g Plain flour
1/2. Tsp baking powder 
1/2. Tsp bicarbonate of soda
125g butter (softened at room temperature)
100g cream cheese
130g caster sugar
2 eggs
Grated zest of one lemon. 
1. Tbsp lemon juice. 

Method:
Preheat the oven at 180c. 
Sift the flour with baking powder & bicarbonate of soda together.  Set aside.

Cream the butter & cream cheese till light and fluffy then add the sugar and whisk for a few minutes so its all combined. Scrape down the sides to make sure everything is mixed together. 
Add the lemon zest and mix it in.


Whisk in the eggs one at a time.

Oreo cheesecake (non bake)

 
I asked my brother what kind of cake he would like for his birthday this year, he immediately said "Oreo cheesecake!" A Cheesecake for your birthday? Strange request but I guess it's still OK as long as it looks like a birthday cake. So being a lovely big sister, I made him an Oreo Cheesecake!
Kids were excited and as I was in the process of making it, they kept coming over pinching the Oreo biscuits. I've lost count of how many biscuits I used but it was almost 3 packets!!
I can't believe how heavy this cheesecake is and not to mention how many calories it contains!
 
So, who said cheesecakes can't be used for birthdays!

 
Here's the recipe to the non bake Oreo cheesecake.
 
Ingredients:
 
100g Oreo cookies (discard the filling)
50g melted butter

Method:
 
 Line the base of an 8 inch spring form tin.
Crush the Oreo cookies and add the melted butter.
Press firmly into the base of the tin and chill for 30 minutes in the fridge.
 
 
For the filling:
 
300g cream cheese
80g icing sugar
10g lemon juice
50g milk
1 tsp. vanilla extract
200g whipping cream

10g gelatine soften in 50g water
Prepare the gelatine by softening it in 50g water, let it bloom for few minutes and then dissolve into liquid, set aside.
 
Make extra crushed Oreo biscuits for the filling and to coat the sides of the cheesecake, cut 6 biscuits in half with a sharp knife for decorating later.
 
Method:
Whisk the cream cheese with icing sugar the add the milk and combine until smooth.
In a separate bowl, whisk the cream to soft peaks. Pour the cooled gelatine slowly and keep whisking until it has completely mixed in well.
Fold in the cream cheese mixture with the cream then pour in the lemon juice and vanilla extract and whisk quickly to combine.
Add more crushed Oreo's and fold until it is mixed evenly.
Chill in the fridge for at least 5 hours or over night.
Once ready, remove the cheesecake from the tin and add crushed Oreo's around the cheesecake.
Pipe cream around the top and add half a biscuit to decorate.
 
And it's ready to serve.
It's really is that easy!
 
Optional
Split the cheese mixture into two.
Add one half with crushed Oreo's and the other half plain.
Pour the mixture with Oreos first then the plain on top and chill in the fridge.

You can make a chocolate plaque by melting white compound chocolates and set on acetate sheets or projector film. This would leave the chocolate a shiny surface when removed, I used to use baking paper and it doesn't give the chocolate a glossy finish.

Mandarin Orange cream cheese cake


 
This is something I put together after a reader have private messaged me to see if I could make a cake she tried at a café.  The cake she had was a Tangerine cream cheese triangle, it looked simple and I was confident that I can copy it.  But after making my cake, I put the two together to compare, it looks nothing like it! Ha-ha! I think mines were a little too over decorated!
 
 
So this is the recipe you have all been waiting to try at home.  I would say it's a little complex to make but if you're feeling adventurous then this would be the one to try!

Double chocolate cheesecake

 
Rich, smooth and very chocolatey.  Made this for my friend who was visiting me.
I love the colours of the dark and light with a base of Oreo biscuits.
I kept the design simple as it looks sharp with the two layers.
This would still work well in a 7 inch cake tin, you would get a higher cheesecake.

Chocolate cheesecake

 
 

Friday morning, kids are both at school, I have the morning free but it was absolutely chucking it down today.  I wasn't in the mood for shopping so what can I do?
Shall I make a cheesecake? Oh why not haha..
 
I thought I could bake a simple chocolate cheesecake but I ended up piping chocolate to decorate the cheesecake. As usual, I like to make my cakes to look pretty.
 
And here I made this chocolate cheesecake with piped chocolate deco and strawberries.
And what is so great about this? It doesn't have to be baked in a water bath. And yes, it cracked but we are going to cover it with ganache.

Lychee Cheesecake (non bake)

 
 
 Lychee cheesecake, I put this together after having a huge hit with my peach cheesecake by my readers. I used tin Lychees in syrup but I find them quite sweet so I used less icing sugar in this recipe compared to the peach cheesecake, using only 1 tbsp of lemon juice for a less sharp citrus taste as I didn't want it to overpower the flavour of the lychees.  This works really well and the gelatine used is the perfect amount to hold it together as a cheesecake.  I added berries for the decorations as Lychees are so pale and white.  Giving it some red and blue colours makes this cheesecake look more attractive.

Non bake mango cheesecake


This is very simple to make, I love this mango cheesecake. It's refreshing and full of flavour. 

For the base:
100g digestive biscuits crushed
50g melted butter

For the filling:
250g Philadelphia cream cheese, softened
100g caster sugar
2 tbsp lemon juice
1 tbsp gelatine 
200g mango purée
200g whipping cream

Method: 
Combine biscuits crumbs with melted butter and press into the base of a 7 inch 8 inch  loose base cake pan. 
Chill for 30mins in the fridge. 
Dissolve gelatine in lemon juice over hot water bath.
Beat cream cheese and sugar until smooth. 
Add gelatine mixture, beat until well combined. 
Beat in mango purée.
Fold in whipped cream and pour over prepared biscuit base.

Jelly topping: 
150g mango purée
1 tbsp gelatine
4 tbsp water


 Method:
Place gelatine with water in a bowl for few minutes. 
Dissolve over hot water then mix into mango purée. 
Pour on to the mango cheesecake and decorate with strawberries. 
Chill until set.

White chocolate Berry-Misu (Raspberry tiramisu)

 
 

My daughter have been asking for me to make a Tiramisu for her, it's one of her favourite desserts (though she's only been allowed a small serving when I make it.)
There's 2 ingredients that I don't like to give to my children, coffee and alcohol.
 
So I told her that, Mummy's going to make a Raspberry tiramisu.
She's not keen, I promised her it would taste yummy!
Still, she don't like the idea until I mixed white chocolate in with the mascarpone cream....
Mmmm...... the kids were fighting to lick the spoons after they tasted it.
 
Though there's no baking involved, this still took a while to put together.
If you want to have a go at making this then you need a ring mould to hold the ladies fingers.
I cut off the bottom of the sponge fingers so it would stand around the mould.
You can use a spring form tin but take out the bottom of the tin.
 
This is a 7 inch Berrymisu cake.

Peach cheesecake (non bake)

 
 
 
"You have been baking far too much lately" hubby says.
But I was itching to make something, well something I don't need to bake so he won't moan at me.
I thought maybe a cold dessert would be nice as my kids gets excited when I say I'll make a dessert.
So I put together a non bake peach cheesecake hoping he would be ok that its not another cream cake.
 
Anyway, I made my cheesecake in under an hour and decorated it with thin slices of the tinned peaches.  It looked great but too bare so I topped it up with a peach jelly made with the juices that came with the tinned peaches.
 
Whoa! This is fun!
 I didn't know what to expect but it turned out to be a very pretty cheesecake indeed.
I have managed to pull off another delicious cheesecake reinventing the recipe as I went along.
This was a massive hit with my friends and especially my hubby!
 
Something you might like to try at home too. Very simple, no baking involved and ready to eat in 4 hours!!

Baileys Cheesecake

 
Mmmmmm...... Baileys and Cheesecake both my favourite, how can I not put them together!
I thought I add some pretty zebra patterns to it just to make it look even more scrummy!

You know me by now, I always make that extra effort in presentation.

So, are you ready to make one too!

You need an 8inch spring form tin with a larger baking tray to make the water bath.
Wrap the baking tin with two layers of tin foil and a layer of baking paper.
You don't want water to get into your cheesecake!!
Line the bottom of the tin with baking paper.

This is seriously not for the light hearted. 
Durian the 'King of Fruits' is strong and pungent.
The aroma is distinctive.
Just like marmite, you either love it or hate it.

Lemon & Raspberry cheesecake




 
Here is one of my favourite cheesecake, Lemon with Raspberries.
I have always preferred baked cheesecakes as I love the creamy and cakey texture.
 
I find baked cheesecakes are easier to make compared to non bake, but I know many people are afraid of making this as the method looks complicated.
But if you have tried it once, you will never buy another baked cheesecake again!
 
 You will need an 8 inch spring form pan & a tray to put your cheesecake into bake in hot water.
Line the bottom of the cake tin with parchment paper.
