Molten lava cupcakes

 
I've always think it's beautiful how chocolate oozes out of a chocolate molten lava cakes.
I don't have enough ramekins so I thought baking them in cupcakes I might get similar results, in fact this was better than expected.
Small and dainty, it was perfect for me!
It's so easy to put together as I always like simple recipes and something fuss free!
This can be made all in 30 minutes if you have everything ready.
You can get 6 mini size molten lava cupcakes out of this recipe but if you like a larger size just double up the ingredients and bake for longer.
 
 

Ingredients:
 
55g butter, softened at room temperature
55g caster sugar
1 egg
80g self raising flour
1 tbsp cocoa powder
6 pieces of dark chocolate cubes
icing sugar to dust
 
Preheat the oven at 180c
 
 
Get all your ingredients ready.
 
 
Place double layers of cupcake cases in your muffin tins.
I used muffin cases as I ran out of cupcake cases.
 
 
 Whisk egg, sugar and butter together until it is smooth.
 
 
Add the flour and cocoa powder and whisk.

 
The batter will be thick.

 
Scoop a tbsp of batter into the cases and add a piece of chocolate in the centre.

 
Scoop the remaining batter on top to cover the pieces of chocolates and put into the oven to bake for 13-15 minutes, depending on how hot your oven is, to test push the top and it should be firm but soft to touch and springs back.

 
Leave to cool for 3 minutes and take it out the cases.
 
 
You can sit it upright or upside down.

 
Dust with icing sugar.
 
 
Add raspberry to decorate.

 
And finally, tuck in while it is still warm.....Mmmmm
You can add a scoop of ice cream and that would be the perfect dessert!!

  2. Hi mandy I tried out dis recipe bt d chocolate din melt.inside.. Sad part.. Wat kind of chocolate yu used???? I.used a nrml Cadbury dairy milk cube..

    1. Hi Ruba, you can use any brand of butter unsalted is only a littl salty but won't affect the taste. As for your chocolates didn't melt, I think you have over baked it. Using normal eating chocolates will do, it woul taste nicer too.

  3. Hi! Thanks for the recipe. I followed it and also shared it on Bakers Corner. The only setback is there wasn't any eruption when the cake was cut into half. I will tweak it the next time by adding more chocolate and shorten the baking time.

    I love all your cakes. They are beautiful!

    1. Hi Karen, thank you for your message. As my cupcake version is easier to make and relying in the piece of choc for the lava that oozes out the centre. We are very warm so will wait in the shade!
