Chocolate christmas pudding

This is the latest trend for cake makers and hobby bakers. I've seen so many people make them, I can't help but to try it out myself. This is so easy and fun to make it would only take you 10-15 mins.
Great gift ideas or just to treat yourself. Hope you would try it too.
 
All you need is:
1 Terry's chocolate orange
1 bag (121g) Maltesers
Some melted chocolates to stick on the Maltesers.
Fondant (white, green & red)

Doughnut muffins (Duffins)

Doughnut Muffins
 


Makes 6 duffins or double the recipe to make 12.
(A)
70g caster sugar
100g plain flour
1/4 tsp bicarbonate of soda
(B)
50g plain yoghurt (I used sour cream)
1 large egg
1/2 tsp vanilla extract
70g melted butter

Nutella or jam filling of you choice, I used Nutella.

Preheat oven 190c
Grease muffin tin generously with butter or use muffin cases.
Mix ingredients (A) together.
Whisk (B) to combine.
Pour (B) into (A) and fold until it's all mixed together.
Spoon half of the batter into the muffin tin and add 1.tsp of Nutella in the centre of the batter. Then add the remaining batter over the top covering the filling. Use a fork to make sure the filling is completely sealed.
Bake in the oven for 18 mins.
Take out the oven and roll into caster sugar with a sprinkle of cinnamon powder (optional) I do like the cinnamon taste.
Ta da! It's that easy!

White modelling chocolate

 
 
I have found the next best thing for my cream cake decorations.
White modelling chocolates.

You need :
12oz of Wilton's candy melts
70ml of glucose syrup
 
 
Melt the Candy melts in the microwave, heat it for 30 seconds and mix, another 30 seconds and it should be half melted and mix then lastly 20 seconds and it should have completely melted.

Nutella cupcakes


Mmmmm Chocolates! My weakness and I can't get enough of it!
How about a soft chocolate sponge with thick creamy Nutella buttercream?
This is one you have to try if you have a sweet tooth and a big fan of chocolate.
My daughter have helped me with this and it's the kind of baking you can get your children involve too!

Modelling chocolates

 
 
Modelling chocolates, it's very delicious and so versatile that you can make anything out of it like fondant. I decide to learn how to make this as I am a cream cake hobby maker. Other than fresh fruits, I wanted to make something different to decorate my cakes with.

Here is the recipe broken down into smaller batches easier for me to work with.

Ingredients:
113g dark chocolate
50g golden syrup (original recipe calls for light corn syrup but I haven't been able to find them in the shops)

Method:
Melt the chocolate over a double boiler, warm up the syrup in a jug.
Pour syrup into the melted chocolate and then fold gently. Keep folding until it comes together. The mixture will be stiff and like sugar paste. Once it's all combined, wrap with cling film and leave overnight to firm up.
When you're ready to use it, knead until smooth so you can start moulding it.

Double chocolate cheesecake

 
Rich, smooth and very chocolatey.  Made this for my friend who was visiting me.
I love the colours of the dark and light with a base of Oreo biscuits.
I kept the design simple as it looks sharp with the two layers.
This would still work well in a 7 inch cake tin, you would get a higher cheesecake.

Chocolate cheesecake

 
 

Friday morning, kids are both at school, I have the morning free but it was absolutely chucking it down today.  I wasn't in the mood for shopping so what can I do?
Shall I make a cheesecake? Oh why not haha..
 
I thought I could bake a simple chocolate cheesecake but I ended up piping chocolate to decorate the cheesecake. As usual, I like to make my cakes to look pretty.
 
And here I made this chocolate cheesecake with piped chocolate deco and strawberries.
And what is so great about this? It doesn't have to be baked in a water bath. And yes, it cracked but we are going to cover it with ganache.
